  • 2 T. sugar-free peanut butter, room temperature
  • 1/3 c. tamari or coconut aminos
  • 2 T. Swerve sugar replacement
  • 2 T. rice wine vinegar
  • 1 T. toasted sesame oil 

Stir Fry Ingredients:

  • 2 T. olive oil, divided
  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 T. fresh ginger, finely minced
  • 2 c. red cabbage, sliced thin
  • 1 c. broccoli florets, roughly chopped
  • 1 medium orange bell pepper, sliced thin
  • 1/3 c. roasted cashews, roughly chopped
  • 1 12-oz. bag cauliflower rice, steamed

How To Make Chicken Cashew Stir Fry 

Prep time: 20 minutes

Cook time: 15-20 minutes

Serves: 6

Step 1. In a large saucepan or wok, combine all of the ingredients for the sauce. Bring to a boil over medium-high heat and immediately reduce the burner temperature to just below medium. Simmer for 5-6 minutes, or until the peanut butter is fully melted and the sauce has been reduced by half, stirring frequently. Put the sauce in a bowl and set it aside for later.

Step 2. Carefully wipe the hot skillet with a damp cloth and add one tablespoon of olive oil and the chicken. Cook over medium-high heat, stirring continually until chicken has developed some color before cooking through approximately 4–5 minutes more.

Step 3. Add ginger and continue cooking, stirring continually, for one additional minute. Transfer chicken to a bowl and set aside. 

Step 4. Add the remaining tablespoon of olive oil to the pan. Add the cabbage, broccoli, and orange bell pepper and cook, stirring frequently, until they are crisp-tender and have taken on a golden color, around 2-3 minutes.

Step 5. Return the chicken to a skillet and stir in chopped cashews. Pour reduced sauce on top; cook for 1-2 minutes or just until heated through, but do not overcook!

6.  Remove from the heat and, if necessary, season with salt and pepper before serving.
