Instant Pot Enchilada Soup: A Mexican Meal in Minutes

What is enchilada soup exactly?
The word “enchilada” comes from the Spanish verb enchilar, which means to season with chili peppers. Enchilada is a Mexican dish that consists of corn tortillas dipped in red or green sauce and rolled around cooked meat (usually chicken), cheese, and typically onion. The word has also been used as an adjective for describing someone who is so excited that they are on the verge of exploding. This dish is similar to my creamy chicken tortilla soup.
What to serve with enchilada soup?
Spicy Mexican food is always served with a side of chips and salsa. But what should you serve with Enchilada soup? Here are some other ideas:
- Pork rinds
- Taco shells
- Nacho cheese
- Shredded Cheese
- Sour Cream
- Salsa (for topping)
- Jalapenos (for topping)
- Guacamole (for topping)
- Chopped Tomatoes
For a fresh and healthy option, try serving with:
Romaine Lettuce Hearts or Tortilla Strips for dipping. You can also serve your Enchilada soup as an appetizer by using small bread bowls like the kind you get at Panera.

Instant Pot enchilada soup ingredients
- 1 lb. boneless, skinless chicken thighs
- 1 medium orange bell pepper, chopped
- 1 medium tomato, seeded and chopped
- 1 4-oz. can green chiles, undrained
- 4 c. chicken broth
- ¼ c. sugar-free tomato sauce
- ½ T. chili powder
- 1 t. ground cumin
- ½ t. chipotle powder
- ½ t. smoked paprika
- 1 t. garlic powder
- Sea salt and black pepper, to taste
- 1 c. Mexican-blend cheese, finely shredded (+ additional for garnish)
- ¼ c. fresh cilantro, chopped (+ additional for garnish)
- 1 large avocado, cut into chunks
- 1 large lime, cut into wedges

How to make Instant Pot enchilada soup
Prep time: 15 minutes
Active cook time: 10 minutes (+ time to come to pressure)
Natural release: 10 minutes
Yields: approximately 10 cups
1. Place the chicken thighs, bell pepper, tomato, tomato sauce, and green chiles in an Instant Pot® cooking container. Pour a mix of the fragrant spices (everything except the cilantro) and chicken broth on top and season with salt as desired to get this party started!
2. Add the lid and make it tight so that all of the juices stay inside your tasty meal! Flip the pressure valve to “Sealing,” then put it on high for 10 minutes.
3. When the timer is done, let the steam come out for 10 minutes (Natural Release) before you do a quick release to make sure that you don’t overcook your dish.
4. When the chicken is cooked, take it out of your Instant Pot® and put it on a plate. Shred the chicken with 2 forks. Put the shredded meat back into the Instant Pot® and add some Mexican cheese while stirring until it melts completely. Add some cilantro to give an extra taste to this meal!
5. To serve, fill a bowl with soup. Garnish your soup with avocado and cilantro to make it taste like Mexican food or any other kind of garnishes you like. Eat the soup before it gets cold! You can also put some lime juice on top of the bowl if you want to.
